I was experimenting with fish cake recipes and this one was a winner:
1 stalk celery, coarsely chopped (75g) 3 green onions, coarsely chopped (50g) ¼ cup fresh parsley leaves 400 g white fleshed fish (I used tilapia) 40 Breton mini crackers crushed into crumbs 2 egg whites (I omitted these and added a little more mustard and a tsp water) 2 tsp Dijon mustard ¼ tsp pepper Pam cooking spray
Directions: In food processor pulse together celery, green onions and parsley until finely chopped. Place into bowl. Pulse fish in food processor until fine. Add to bowl. Mix in bread crumbs, egg, mustard and pepper. Divide into 8 portions and form into ½ inch patties, in non-stick fry pan sprayed with Pam cook fish cakes, over medium heat, flipping once, until golden and firm to the touch – about 8 minutes.
2 patties = 1 protein, 1 bread
