I bought a bag of dried Navy Beans and soaked them for a night and day.  Then Popped them in the Slow cooker with some (unlimited) Chicken broth (for added flavor but water or Veggie broth would also do the trick) and cooked them overnight on medium heat.  Not surprising they turned out very over cooked!  But a friend also doing Dr. B (FIG) had an amazing idea that I tried and LOVED!

1/2 Cup (4 oz) of Beans seasoned to taste with Salt and Pepper
2 Tbsp Salsa
1/4 Cup FF Kraft Cheddar (Or Allegro for those in Canada)
1 La Banderita Whole Wheat Tortilla ( Or whichever you prefer, I like these cause they are big and very soft)

Heat beans seperately
Assemble like Bean Burrito, wrap in Paper towel and Microwave for 30 seconds.

1 Protein, 1 Bread, 1 Misc

2.6 oz dried beans = roughly 7.8 oz cooked (according to my internet research on the conversion, silly me didn't measure before cooking)

It was so good I didn't even notice it wasn't a "Real" burrito.  Having again for Lunch today!

I didn't use that much cheese in mine, but it was fabulous either way.  Thanks for posting
