**NOTE: Please check with your clinic first about leeks. I know they are not on the list as allowed or not allowed, but they are an onion, and it simply says onions are allowed. I checked with a nurse at my clinic who checked with the manager there and she agreed that they are an onion and that it is ok, but probably best to ask.

Ingredients:

4oz cauliflower
4oz leeks
.5oz parsley
1 Harvest Sun vegetable boullion cube
2 cups water

Cut up the cauliflower and leeks and put into a pot with 2 cups of water and the bouliion cube (you could probably use any of the allowed broths, but I use this one as my boyfriend is vegetarian and enjoys this meal. Might be ok with chicken broth though). Boil until cauliflower is soft enough to put into a food processor or blender. While it's cooking, chop up the parsley. Once the cauliflower and leeks are cooked, add the parsley. Pour soup into food processor or blender and blend :)

Yield: 1 (plus a teeny tiny bit) vegetable. I usually double it and keep some for the next day.

I made a version of this using chicken broth and I sauteed the leeks instead of boiling them with the cauliflower. Very yummy and refreshing! Highly recommend:)
