I used a whole bag of red lentils for this. (2 cups)
Chicken Broth (4 cups)
Head of Cauliflower
Can of approved diced tomatoes
Curry powder to taste
Vegeta seasoning to taste
Salt and pepper to taste

Cook the lentils in the chicken broth until done. While doing this, boil the head of cauliflower.
When the cauliflower is done, add it to the lentils and add the tomatoes. Then puree it all in your blender of food processor.

I divided it up into servings of 1/2 cup per serving.  It made about 16 servings.

I get it at Loblaws here in Canada in a blue can. Where are you located?
