Sopa de Lima  is a yummy Mexican soup that consists of shredded chicken, lime and fried tortilla.  Here's a legal version of this soup.  I'm tooting my own horn once again but this soup came out sooo good, I will definitely be eating this off strict as well.  I can't wait to have it for lunch.

The following makes 4 servings (it's just easier this way)

400g chicken breast (uncut)
8oz onions
8oz diced tomato
8oz green beans
8oz chopped celery
l lime
tsp vegeta
container of Campbells vegetable broth
4 cups of water

Pan fry the chicken (don't cut into chunks or strips) with PAM until cooked and browned and set aside.

In a pot lightly fry onions and celery with PAM, throw in the green beans, tomatoes and hand shred the chicken (it should have cooled down by now) - I really think the shredding is important, cutting into chunks before hand changes the taste and texture in my opinion.  

I put almost the whole container of broth (nurse told me that broth is unlimited) and 4 cups of water, salt to taste and bring to boil.  Let simmer until vegetables are tender - remove any froth from top.

During the last 5 minutes add Vegeta and cut lime into half squeeze all the lime juice and throw in the whole lime. Let simmer for another minutes.

Measure equally into 4 containers.

Yields 1 protein and 1 vegetable per serving.

You could bake a tortilla and crunch over top before eating but I don't think it would be as good as fried tortilla because it will get soggy.
