Hey Everyone! So last night I was sitting at home, very bored, and feeling kinda down.  Usually when I'm in a not-so-good mood,  I reach over for a bag of Tostitos, lay them on a plate, shred the fattiest cheese EVER over them, throw in some salsa and gorge on that for  a bit.

Last night I decided to make a Dr. B friendly version of this.   It turned out delicious!  

150 -200 G of Cauliflower.
50 g's lettuce
2 Tbsp  Old El Paso Salsa
1 Tbsp Philly 95% Fat Free cream cheese

Chop the Cauliflower up into little bit-size pieces.  (they'll look like popcorn).   Using Pam Butter Flavoured Spray, lightly spray the top of the cauliflower.  stick this in the oven and bake/broil for about 30 minutes.  The cauliflower 'top' should be lightly browned.  

Meanwhile,  in a small bowl, mix together the 2 spoons of salsa and the 1 spoon of philly cream cheese.  stick in the microwave for 20 seconds so the cream cheese melts a bit... and then whip together.  add a spoon or two of water to 'water' this down so it turns into a 'sauce.'

Once the cauliflower is golden brown,  it tastes like popcorn!  put into a plate, and pour the 'sauce' over the cauliflower.  Garnish with some lettuce.. or parsley.  Pick up a fork/spoon and enjoy!

This totally took care of my 'junk food' craving.  Luckily I had not consumed any of my garnish's during the day so I was able to use the salsa/cream cheese at once.  If you plan on watching a movie at home and know the 'junk food' cravings may kick in... plan ahead and try making this!  It's delicious.

okay, movie night here on Saturday night and I was dreading it, because both of those are my downfall, and I work beside a Kernels..... and it is nachos and popcorn, beer, wine and now it will include the cauliflower, I will purchase a head tomorrow!

This looks good!

I'm a bit confused though: in the ingredient list it refers to lettuce, but in the recipe it talks about cabbage.

I guess lettuce was a typo and the ingredient is actually cabbage?

LOL you weren't dreaming .... I edited the post for her as I am sure cauliflower was definately supposed to be the word wherever you saw cabbage.   :D
