My 2nd fav reciple

200g black-eyed beans/peas soaked overnight
1/2 large onion finely diced
2 cloves of garlic minced
1/4 tsp grated ginger
1 tbsp tomato paste
1/2 tsp of garam masala (you can use any masala you like, even ground cumin)
1/4 tsp of tumeric
red chili flakes
salt to taste

First, you'll need to spray PAM a little longer than normal so pot is coated good. Fry onion, garlic and ginger until lightly browned on medium heat

Add tomato paste and about 1/2 cup of water so it becomes a sauce.

Add masala, tumeric, salt and chili peppers.

Rinse the pre-soak beans and add them to pot.

Add water so beans are completely covered.  Bring to boil - once boil - put to medium  heat and let boil until beans are soft (35mins or so).  If you want to "thicken" the gravy a bit - cover with lid and it will evaporate the water - just keep an eye on it.

You can eat on own or with pita.

This makes 2 servings - 1.5 cups.  (I actually portion as 4 1/2 servings instead of 2 full servings).
