200g of dried black-eyed beans (BEB)
16oz of favourite veggies - I recommend zucchini, onion, tomato and celery
1 tsp of tomato paste
1 tsp of vegeta
1/4 tsp garlic
Soak BEB in water overnight.
Rinse and replace with fresh water. Boil beans until soft, remove froth. Add remaining ingredients and let boil until veggies are tender.
I wanted to thicken it but didn't know what legal ingredient I could use to that.
Yields: 2 Proteins, 2 Vegetables and 1.5 Miscellaneous: Seasoning (Rough estimated maximum when using a teaspoon for above recipe)

Thanks for the tasty sounding recipe! I've just edited it to include the seasoning amounts.
Also, please remember that there is a restriction on the amount of allowed tomato paste you can have in a day. The maximum allowed is 1 tablespoon. For the purposes of this recipe that's fine!

I put 1 tsp of vegeta and tomato paste which is roughly 1/2 tbsp - so the total for garnishes should be 1 or at the most 1.5...if you can correct that please.

Thanks for this recipe Sabina! I made it over the weekend (doubled the recipe, saved some in freezer) and I substituted the Vegeta for McCormick's low fat bouillion cube as the cube is my preference over Vegeta.
It was fantastic!! This was my first bean meal since starting the diet and it was delicious!! I am so glad I made a big batch...planning on having it for dinner again tonight!!
