100g (dry weight - approx 1/2 cup) of red lentils rinsed
1/2 onion (optional)
1/4 tsp tumeric
1/2 tsp cumin
grated ginger*
chopped green chilis* (optional)
salt*

*to taste

Add lentils to pot and approximately 2 cups of water (depending on your desired consistency, if you're adding water to an already boiling pot, be sure the extra water you add is boiled first).

Bring to boil and remove the froth with spoon

Add in remaining ingredients and let simmer for approximately 30mins.

Lentils thicken once cooled.

Yeilds 1 protein and part of vegetable serving

I really appreciate all the vegetarian recipes Sabina.  I think vegetarians have a harder time on Dr. B than other folks because of the limited protein choices.  Too bad you can't have lentils every day -- then you'd be all set!
