I made this the other night and it was quite good.

Ingredients:
3/4 cup Egg Beaters (or use whole eggs if on maint.)
3 ounces of cubed shirataki (like the "dice" sold by KonjacFoods) rinsed and with as much water squeezed out as possible
1 tbsp soy sauce
Onions, fat free cheese slices, peppers, tomatoes, whatever the heck else you want in your omelet.

Directions:
Spray a large skillet with Pam.
Saute your veggies in the Pam until cooked the way you want them (or a little under).
Add the cubed shirataki to the skillet with a tablespoon of soy sauce (adds color and flavor to the shirataki).
After the liquid is gone and things start to glaze, remove the veggies and shirataki from the skillet.
Add eggs to the skillet and let the bottom cook a bit to get solid (so the shirataki and veggies won't poke through the bottom)
After the bottom layer is cooked a bit but there is still a liquid top layer, dump/spread your shirataki and veggies on.  Hopefully there is enough egg to cover them.
Cook until nearly completely cooked and then fold in half to seal.  Cook 'til it's like you like it.

Remove from skillet, spray with ICBINB spray, season with whatever you like on an omelet.

Yield: 1 Protein, 1 Garnish, plus your veggies and whatever else you add

Brian I have 2 things for you.

1) Egg Beaters are 1/2 cup for strict 3/4 cup if the EggBeaters have veggies in them like the Southwest or Garden Vegtables. Also if you add Fat free cheese you need to up the protien.

2) I'm assuming the shiritaki is homemade? If not where do you get cubed locally? I know there is the website you can order it from.

I personally decided that 3/4 cup of egg beaters, any flavor is 1 protein on strict regardless of the food list.  A Dr. B protein serving should be no less than 15 grams of protein.  One half cup of egg beaters is only 12 grams.  The garden vegetable and original egg beaters have identical nutritional content, so if 3/4 cup of garden vegetable (which is 18 grams of protien) is OK, so is the original (per me anyway).  

The cubed shirataki was ordered from KonjacFoods.com.  They call it their "dice" shirataki.  I also have solid blocks of shirataki that I can cut into any shape I need.
