I decided to make a PDF of this in case the original site ever goes away.  Really good information on whipping egg whites and using cream of tartar or vinegar to stabilize them.

Note: Cream of tartar has some calories and carbs.  If on strict you should use vinegar.  If on maintenance, nutritional data for cream of tartar is here.
