EZ Curry Lentils
200g Green lentils
280z can of diced tomatoes
1 Tbls Curry powder- or to taste
I add hot sauce because I love it - U Can 2!
Low boil lentils in about 8 cups of water till tender. About 45 minutes.
Drain and add tomatoes and curry powder. Stir and simmer till juice of tomatoes is reduced. Approx 15 - 25 minutes
Yield 4.5 cups
1 cup = 1/2 protein & 7oz veg
Use half a cup for a snack or side dish
Yummy over steamed veggies or shirataki noodles
Add garlic too if you like
Sprinkle with coriander for a twist in flavour
**Remember maximum servings of lentils allowed per week and be mindful if you have a sensitivity to tomatoes.
