Let me say that I used medium frozen shrimp, already cleaned and cooked, with the tail on.  I ran them under cold water to separate and then I broke off the part with the tail (shell) .

11 shrimps- 3.5 oz after I broke off the tail portion.
1 clove garlic
fresh ginger
juice of 1/2 lime
tomato (optional)

Then, all I did was chop up a clove of garlic, thinly slice a bit of fresh ginger, a few shakes of Oregano,and the juice of 1/2 lime.  I have a citrus squeezer so it was a lot of juice.  Mix that up, dump the shrimp in, cover bowl with saran wrap, and put it in the fridge for a few hours.  I would have added chopped tomato (when ready to serve) and fresh cilantro if I had remembered!  The lime "cooks" the shrimp, so if you let it sit to long, it will get tough!  I also steamed 6 oz of brocolli with the left over juice and then chilled it.  That was my dinner!

Yield: 1 Protein, 3/4 Vegetable (more if you add the tomato)

mm I love ceviche and my family kills it practically once or twice a month but they fry up some plantain or eat it with nachos..its been hard to avoid the add ons but I make this for myself all the time ..without the ginger and add a tiny bit of dill to make it authentic ecuadorean style..

had some last nite :D
